Picnic Recipe: Outrageous Chocolate Cookies

Cookies are the perfect addition to any picnic but they are also a big favorite around the holidays. They make nice gifts for friends and neighbors and they are easy to carry to holiday gatherings and potlucks. This recipe for chocolate cookies is one of our favorites!

These cookies are not meant to be cooked to crispiness. They are best when soft and chewy. Store them in an airtight container for two or three days and enjoy!

Here’s what you need:

8 ounce(s) semisweet chocolate, roughly chopped
4 tablespoon(s) unsalted butter
2/3 cup(s) all-purpose flour, spooned and leveled
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
2 large eggs
3/4 cup(s) (packed) light-brown sugar
1 teaspoon(s) vanilla extract
1 package(s) (12-ounce) semisweet chocolate chunks

Throwing it all Together:

Preheat oven to 350 degrees F. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring in between, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt.
In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks.
Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on sheets 10 minutes; with a thin metal spatula, transfer to racks to cool completely.

Picnic Recipe: Grilled Eggplant, Tomato, Provolone, Pesto Sandwiches

This veggie sandwich is a yummy addition to any picnic!

Here’s what you need:

4 Large Slices of Eggplant, Salted

EVO

Baguette (or your favorite crusty bread)

¼ Cup Basil Pesto

Tomato Slices

Sliced Provolone

2 Small Handfuls Arugula (or your favorite greens)

Here’s How You Throw it all Together:

Place the eggplant slices on paper towels in a portable container. Sprinkle with salt and drizzle with olive oil and cover tightly. Separately pack the baguette, pesto, tomato, cheese and arugula, and then pack everything but the cheese in a picnic basket. Pack the cheese in the cooler.

Prepare the charcoal fire. Pat the eggplant slices dry with paper towels. When the coals are ready, grill the eggplant slices, turning once, until browned and softened. This will take only a few minutes on each side.

Serve:
Split the baguette in half horizontally and then cut in half crosswise. Spread the pesto on both cut sides of each piece. Cover one side with tomato slices and provolone. Cover the other side with eggplant and top with arugula. Close up the sandwiches, slice in half and serve. Alternatively, make the sandwiches at home, wrap well and pack in a basket for the picnic.

Themed Picnic: Wine Tasting

Wine goes hand in hand with picnicking but putting a wine tasting spin on the traditional picnic is an exciting way to dress up the traditional picnic and create an experience to remember. Looking for seasonal and full-bodied wines that tend to be warm as the weather turns chilly would be the perfect wines to taste.

We recommend tasting 3 to 4 different wines at a time and it can be a romantic tasting for two or a fun group event. Either way, make sure you have enough wine on hand to make sure everyone gets an adequate taste and then gets to enjoy a glass or two of their favorite wine at the end of the tasting.

Here are the basics of wine tasting:

Pour enough wine in the glass for two or three good sips.
Look at the wine as you swirl and tilt it in the glass. Check the color. You’ll begin to notice, depending on whether the wine is a red, rose or white that there is color variation. For example, a red wine may look ruby red, purple or even brown. A white wine might be straw colored or amber.
Swirl for 10-15 seconds and then smell the wine. You might experience a undertones of cinnamon, bark, honey, pear...it’s always fun to see what each person smells in the wine. The smell of a wine is considered very important in determining the character and uniqueness of a wine.
Take a small sip first and get your initial impression. Is it dry, tangy, sweet? Then go for a big sip and really swirl it round in your mouth and over your tongue – swish it like mouthwash. Now, what’s your impression? Very often, the initial impression you have will change as you hold the wine in your mouth.
Then, swallow. This is called the “finish.” How long does the flavor of the wine stay in your mouth after you swallow? This is where you make your determination about whether you like it how it would be with food, if it’s acidic or balanced, etc.

Once you get the basics down, wine tasting is a lot of fun and comparing notes and individual preferences is always surprising. Be sure to pack a couple of picnic blankets and bring food along in a picnic basket. It’s a good idea to transport wine in a wine carrier or tote for quick and easy packing. And, most importantly, have fun with it!

Fun Seasonal Picnic Recipe: Halloween Jack-O-Lantern Tarts!

For Halloween Picnic Fun!

Jack-o-lantern Tarts from Martha Stewart

This recipe makes 12 tarts that can be easily packed for a fun picnic dessert.

Here’s what you need:

All-purpose flour, for dusting

Pie Dough (you can find pre-made pie dough in the frozen section) – enough for 2 1/2 pies

1 fifteen-ounce can solid-pack pumpkin puree

3 large eggs

1/2 cup honey

1/4 cup packed light-brown sugar

1 cup plus 2 tablespoons heavy cream

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1 teaspoon salt

1 large egg yolk

Here’s How You Throw it all Together:

On a lightly floured work surface, roll out one disk of dough to a 1/8-inch thickness. Cut out six 6-inch circles. Fit pastry in bottoms of six 3 3/4-inch fluted tart tins. Trim overhanging edges. Place tins on an ungreased baking sheet, and transfer sheet to refrigerator; chill shells until firm, about 30 minutes. Repeat with second disk of dough, lining six more tins.

Roll out third disk of dough to an 1/8-inch thickness, and cut out twelve 3-inch circles. Place circles on a parchment-lined baking sheet, and transfer to refrigerator. Chill until very firm, about 30 minutes.

Heat oven to 375 degrees. In a large bowl, whisk together pumpkin puree, eggs, honey, sugar, 1 cup heavy cream, cinnamon, ginger, cloves, and salt. In a small bowl, lightly beat together egg yolk and remaining 2 tablespoons heavy cream. Remove the tart tins from refrigerator, and brush crusts with egg glaze. Divide filling among shells.

Transfer baking sheet to oven, and bake tarts until edges are golden brown and filling has set, about 30 minutes. Transfer baking sheets to wire racks to cool.

Remove chilled pastry circles from refrigerator. Using a clean utility knife or a sharp paring knife, cut a jack-o-lantern face into each circle. Chill faces in freezer 15 minutes. Brush faces with remaining egg glaze.

Transfer baking sheet to oven, and bake faces until golden brown, about 12 minutes. Transfer to a wire rack to cool.

When pies and faces have cooled, place one face on each tart.

These tarts can be packed into any picnic basket or cooler and served at any temperature. Your friends and family will love them. Yum!

Picnic Recipe :: For the Festive Fall Picnic!

Here’s a recipe we just love – Spicy Slow Cooker Black Bean Soup.

It requires a little bit of planning for prep time but it’s a lovely switch from traditional picnic fare. This hearty soup can be cooked in a slow cooker on low overnight the night before your picnic and placed in a thermos for your picnic. It can even be carted to Friday night football games and served instead concession stand food.

Here’s what you need:

1 pound dry black beans, soaked overnight
4 teaspoons diced jalapeno peppers
6 cups chicken broth
1/2 teaspoon garlic powder
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cayenne pepper
3/4 teaspoon ground black pepper
1/2 teaspoon hot pepper sauce

Here’s How You Throw it all Together:

Drain black beans, and rinse.

Combine beans, jalapenos, and chicken broth in a slow cooker. Season with garlic powder, chili powder, cumin, cayenne, pepper, and hot pepper sauce.

Cook overnight on low or if cooking during the day, on High for 4 hours reducing to low heat for an additional 2 hours (or until you are ready to eat).

Place in thermos and enjoy!

The Sunshine Blanket :: Product Review

This particular picnic blanket is so much more than a picnic blanket. We put this blanket to the three-year test. It’s been carried and used at soccer games, the beach (numerous times), on picnics, camping and on hiking excursions over the years. It’s been borrowed by friends and relatives and held up (remarkably well in our collective opinion) to the kid test.

We can honestly say this little blanket really is everything it says it is. It truly keeps your seat dry – one of the most important things to consider when purchasing a picnic blanket. The PVC underside keeps moisture and dirt away while the soft polyester fleece is super comfy.
We found the blanket to be easy to carry and store which is great when carting around kids to soccer games or other outdoor events.

After three years of wear and tear and travel, after more unfolding and refolding than can be counted, after being washed (more than once) in the washer AND placed in the dryer (which the care directions tell you specifically NOT to do), the Sunshine Blanket we’ve owned and used for three years is just beginning show signs of use. The PVC backing is starting to crack a little, most likely from putting it in the dryer and one edge is a bit frayed. Not bad considering it belongs to our super busy, on the go family and it has definitely not been handled gently.
This blanket gets a really big two thumbs up! Love it and highly recommend it.

Labor Day Picnic Recipe: Potato Salad

This Picnic Potato Salad from tasteofhome.com is an excellent addition to any end of summer or Labor Day Picnic. It’s a traditional potato salad with a touch of mint for a fresh twist. Serve it on the side of grilled dogs or brats with all the fixins and it’s sure to be a hit. Since it’s made without mayo, this potato salad travels well making it perfect for picnicking. Serves 12 and takes about 25 minutes of prep/cooking time.

Ingredients

10 medium red potatoes, cubed
2/3 cup canola oil
2 tablespoons cider vinegar
4 teaspoons honey
1 teaspoon dried basil
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon dried mint
Dash cayenne pepper

Directions

Place potatoes in a large saucepan and cover with water. Cover and bring to a boil over medium-high heat; cook for 15-20 minutes or until tender.
Drain and place in a large bowl. Combine the remaining ingredients; pour over potatoes and toss to coat. Cool to room temperature. Cover and refrigerate until serving. Yield: 12 servings.

Tailgating Gear Review: Caliente Grill and Cooler

Wow…whoever came up with this idea is genius! It’s a grill and a cooler. It’s portable and easy to pack making it excellent for picnicking and tailgating.

The BBQ (charcoal) grill has a 10” grate providing a 78.5 sq. in. grilling surface making it just the right size for a couple of steaks or burgers for 6. The cooler holds six 12-oz. cans and comes with a strap and carrying handle plus extra storage in an external pocket.

We found it easy to pack up and set up was a breeze. It fits easily into a trunk or back seat and carrying it over short distances is no problem. The entire set weighs around 12 lbs so carrying it up the side of a mountain would be a little iffy depending on how hard core you are. For tailgating, it’s pretty much perfection. Since it’s so easy to pack, unpack and bring along it really is a must have. Plus, all your tailgating friends will want to know where you got that cool grill. You’ll be the envy of the tailgating season.

Labor Day Outdoor Activity Planning

August is here and this month is the perfect time to get in last minute vacations, camping trips, picnicking and of course the traditional Labor Day weekend is lingering right around the corner. This is THE time to get ready for Labor Day family gatherings, outdoor barbecues and parties. Here’s a quick plan to get help you get ready for the outdoor festivities.

Things You’ll Need:

Picnic Basket or Cooler

Food

Drinks

Cutlery (forks, knives, spoons)

Condiments (salt, pepper, mayo, relish, mustard, ketchup, etc)

Paper towels

Hand Sanitizer

Grill (portable grills are great)

Picnic Blanket

Think about the number of people to invite and where your event will be held. Sometimes, a back yard is just as good as a park but it’s a good rule to scout potential places out in advance and call ahead to be sure the facilities are available. Many parks and beach picnic areas fill up quick, especially around the Labor Day holiday.

Decide what kind of gathering you’ll have. Is it a potluck picnic or will you be providing the food? Having people bring a dish helps offset cost and fosters the feeling of community. It also simply feels more casual. But it’s nice to invite people to come relax without asking them to prepare in advance. Either way, don’t wait until the last minute to decide on a menu. Be creative and have fun.

With a little bit of planning, some thought and preparation, your Labor Day barbecue or outdoor picnic party will be loads of fun for everyone. Who knows…it might end up being so popular, it becomes an annual event!
